An Afternoon of Cookies and Happiness

This year, four weeks before Christmas, the entire Quotas team decided to come together to celebrate the unique opportunity to bake more than a hundred delicious and beautiful Christmas cookies. The seasoned bakers among us stepped forward with grace and bravado and delivered an outstanding performance. Special effort was required to restrain some of the sous chefs from eating all the cookie dough.


The results speak for themselves, deliciously spiced cookies and macaroons of chocolaty and fruity flavours. I do not need to say that they didn’t even survive their second day in the office.


Now, we do have a surprise for you. This is a recipe one of our colleagues used to make her chocolate macaroons:

German Chocolate Macaroons

You need:

250 g sugar
70 g finely grated good quality chocolate
250 g finely grated almonds
juice from 1/2 lemon
4 egg whites
baking paper wafers (50 mm) known as Oblaten in Germany

Whisk the egg whites until stiff. Carefully fold all the other ingredients into the egg white mixture.
Using a teaspoon, carefully put about a teaspoon of the chocolate macaroon mix onto the baking paper wafers. Make sure that you leave enough space around the edge as the cookies will spread during baking. Bake in a preheated oven at 150 degrees C for about 10-15 mins. Remove from the oven and leave to cool on a wire rack.
